The kitchen is designed from the menu and flows
First a process map: which dishes, in what volume, which processes. From it follow the sections and equipment. A 3D project arranges zones so clean and dirty flows don't cross — required by both logic and sanitation.
The hot section is the core
The heart of a restaurant: combi ovens, ranges, fryers, grills, griddles. Equipment is sized for peak seating, not average. Powerful supply-exhaust ventilation and a hood over the line are mandatory.
Cold section, prep and storage
A cold section (salads, starters), a prep area (vegetable cutters, meat grinders, slicers) and storage refrigeration — cold and freezer rooms. Electromechanics speed up prep and reduce labor costs.

What to watch for
- Size equipment for peak hour, or the kitchen stalls at the most profitable moment.
- Separate clean and dirty dish flows — sanitation and speed.
- Blast chilling pays off in prep and reduced write-offs.
- Leave a reserve in electrical and ventilation — expanding is easier than rebuilding.
